Salmon with Avocado Salsa

Ingredients

  • 2 4-6 oz salmon fillets without skin
  • 2 tbsp olive oil
  • 1 clove garlic minced or crushed
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Avocado Salsa Ingredients

  • 1 ripe avocado
  • 1/2 cup tomato diced
  • 2 tbsp onion diced
  • 2 tbsp cilantro minced
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • salt and pepper to taste

Instructions

  1. To bake salmon: Pre-heat oven to 400F. Place salmon on a sheet pan and bake for 12-15 minutes or until cooked through. Or pan sear on medium-high heat in a non-stick pan for about 5 minutes on each side or until cooked through.

To make avocado salsa

  1. To make avocado salsa: Add the avocado, tomato, onion, and cilantro to a large mixing bowl. Drizzle with olive oil, fresh lime juice and a pinch of salt and pepper. Gently mix with a spoon until fully combined. Plate and serve with lemon or lime.
